Short answer: It can drop visibility — but availability schema + a restock date held rankings in one test.
The longer version: A garden supplies store had patio furniture go out of stock every winter, and rankings slid 5-7 positions each off-season, then took weeks to recover in spring. They tried keeping the page live with availability: BackOrder in Product schema, an honest 'back in March' date, and an email-when-available capture instead of a dead 'out of stock' button. The next cycle, rankings dipped only 1-2 positions and recovered the day stock returned. Bonus: the email capture collected 1,400 addresses across the off-season. Compared to the prior year's 'OutOfStock' + grey button, this kept the page alive in Google's eyes.
Rule of thumb: For seasonal items, signal 'coming back', not 'gone'. Accurate availability schema beats a dead-end page.
