Big move, but it's a known sequence. Do it in this order and you'll be fine.
Short answer: redirect everything one-to-one, then tell Google with Change of Address.
Long answer:
— Set up the new domain, fully crawlable, with all content live and internal links pointing to the new domain.
— Build the complete old-to-new URL map.
— Configure sitewide 301s, one-to-one, including the homepage.
— Verify BOTH domains in the same GSC account.
— Launch redirects, spot-check across sections.
— Submit the new sitemap; optionally submit old URLs to speed crawling.
— Run the Change of Address tool from the old property.
— Update Google Business, social profiles, and email signatures.
Next step: keep the old domain registered and redirects live for at least a year. Don't let it expire — that kills every redirect at once.
